He spoke about the changes in form of the cheese, from the traditional cloth covered cylindrical cheese, to waxing, with some of the problems associated with the latter procedure, whereby two dairies had been burnt to the ground. To the almost dramatic rise in cheese in block form, which had so many benefits, without deterioration in quality.
He outlined the types of transport used from river, to canal, to sea, to horse and wagons, railway and finally motorised, with the various limitations imposed by each.
"He closed his remarks by pointing out the great improvements which had taken place, improving quality, reliability, better use of milk etc., with the disappearance of virtually all but the larger dairies, which in turn had grown far beyond earlier estimates. He added that Mozzarella had easily moved into second place, in UK consumption due to the changed eating habits of consumers"
